Chicken Paprikash


This is my take on the Hungarian dish chicken paprikash. It's usually served on noodles or white rice, but I served mine on mashed cauliflower, very delicious! This recipe was inspired by Lori's recipe found here.

Ingredients
  • 3 chicken breasts
  • 1 large onion chopped
  • 1 clove garlic (or garlic powder)
  • Paprika (sweet or Hungarian)
  • 1 tbsp. tomato paste
  • 1 cup sour cream
  • 1 tbsp. heavy cream
  • Salt and pepper
  • Chili powder (optional)
Directions
  1. Thinly slice chicken breasts and briefly sauté them in olive oil on high just until pink color goes away (don't cook all the way) transfer to bowl
  2. In same pan, add onion and garlic and sauté until translucent
  3. Add paprika, salt, pepper, sour cream, tomato paste, stir
  4. Then add the chicken back to the pot, stir
  5. Add heavy cream and pinch of chili powder, if you like it spicy and simmer on low at least 10 minutes
Saute chicken briefly, remove

Saute garlic and onion

Add paprika. sour cream, salt, pepper, tomato paste

Stir

Add chicken

Add heavy cream and chili powder, simmer

Final product

Served with mashed cauliflower and wedge salad
