Lemony Goodness


Lemon squares are one of my favorite dishes to make. 
They're so easy and make the perfect summer-time dessert.




Crust
  • 1/4 cup sugar
  • 1 1/3 cup flour
  • 1/2 cup butter, softened
Filling 
  • 3/4 cup sugar (use a little less if you don't want it too sweet)
  • 2 eggs
  • 2 tbsp. flour
  • 1/4 tsp. baking powder
  • 3 tbsp. lemon juice (better if fresh-squeezed!)
  • lemon zest (optional)



Preheat oven to 350°F. Mix crust ingredients in bowl and beat until crumbly. Transfer to 9x9 baking dish and flatten crust with back of spoon or a small round cup until firm starting around the edges and working toward the center. Bake for 15-20 min. or until golden brown edges. During this time, combine all the filling ingredients in a bowl and beat until evenly mixed (I sometimes add a drop of orange oil to enhance the citrus element). Remove the crust from the oven and pour the filling over it and return it to bake for 18-20 min. Cool and sprinkle with powdered sugar for aesthetics. Enjoy!
